If you’re new to Knit Stars, let me tell you a little about Hot Loops. When I was a younger knitter, I always got frustrated in yarn shops, trying to find the on-trend projects I wanted to make and the “right” yarns to make them in…

So when I decided to open a more modern yarn store, I made a wall with 12 tightly-curated projects, displayed together with the “right” yarns, the finished project and photos. Simple, right?

It’s not the simplest thing to put together two new Hot Loops Walls each year…but our customers LOVE it! And the reveal of the next Hot Loops Wall has become a much-anticipated tradition, as we reveal the yarns and projects one by one, chat with the designers and celebrate this craft we all share. ❤️

Longtime Knit Stars customer Carol has made my “Put a Ring On It” pattern, a simple shawl I designed years ago for a club kit, over and over. It’s one of those “foolproof” recipes that seems to look great with any yarn, from solids to speckles to variegates.

So we asked Carol if she could work up one more “Put a Ring On It” in the Full Moon color way of Moondrake Co. MCN Fingering and she happily obliged. We may be biased…but it’s our favorite so far!

Sheet Pan Shrimp

This week’s recipe comes courtesy of Season 8 Star, Ross Taylor! I made this recipe last night to test it out and as promised by Ross, it’s easy, fast, healthy and sooooooo delicious! We served ours with a cucumber salad. It would also be great over rice. Thank you Ross!

Ingredients
For Lime Vinaigrette

  •  1/4 cup lime juice
  • 3 tablespoons avocado oil or olive oil
  • 1 1/2 teaspoons grated ginger or 1/2 teaspoon ginger powder
  • 1 teaspoon ground cumin
  • 1 teaspoon lime zest
  • 1 garlic clove, minced
  • pinch red pepper flakes
Shrimp & Veggies Ingredients
  •  1.5 pounds shrimp, peeled and deveined
  • 1 bell pepper, chopped
  • 1 cup cherry tomatoes
  • 4 garlic cloves
  • 1/2 pound asparagus spears
  • 1/3 cup chopped cilantro
Instructions
  1. Preheat oven to 400 degrees. Line a large rimmed baking sheet with foil. Set aside.
  2. In a small bowl, whisk together lime juice, avocado oil or olive oil, ginger, cumin, lime zest, garlic and red pepper flakes.
  3. Lay down shrimp onto the baking tray along with bell pepper, asparagus, cherry tomatoes and garlic. Separate the shrimp from the vegetables as the shrimp won’t take a long to cook as the vegetables. You can always remove the shrimp and let the vegetables cook longer. Or add the shrimp after the vegetables have cooked for 5-10 minutes. Season the shrimp and veggies with salt. Drizzle lime vinaigrette over the shrimp and vegetables.
  4. Bake the shrimp and vegetables on the baking sheet in a 400 degree oven for 8-10 minutes or until the shrimp is cooked through and pink. Sprinkle on cilantro and serve.
