🧶Sneaking in stitches

Hi, my name is Shelley and I have a rose gold Joji bag obsession 🙋‍♀️

Roasted Cod with Cashew Coconut Lime Topping

I’ve always been a fish lover, but ever since I moved to Florida I’ve become a bit of a fanatic. After living in land-locked Oklahoma all those years, to have access to fish that was in the ocean this morning is so amazing.

But I’m mindful of all those years of less accessible seafood access, so I was especially excited to find this recipe that uses cod – a delicious, firm white fish that’s readily available at most groceries across the US. And bonus, it’s usually quite affordable compared to other fish.

On top of all that…I think this simple, Caribbean-inspired dish from Valerie Bertinelli via the Food Network might be my absolute favorite fish recipe, ever. The coconut-cashew-lime-cilantro topping combines all of my favorite flavors but doesn’t compete with the flavor of the fish. Try it tonight with any firm white fish (we used Scamp, my favorite local variety of grouper).

Topping

  • 3/4 cup roasted salted cashews, finely chopped
  • 3/4 cup unsweetened flaked coconut
  • 2 teaspoons olive oil
  • 1/2 teaspoon curry powder
  • 1/4 teaspoon kosher salt
  • 2 teaspoons finely grated lime zest
  • 3 tablespoons chopped fresh cilantro

FIsh

  •  Olive oil, for the pan
  •  2 pounds skinless cod fillet, cut into 4 evenly-sized pieces
  • Kosher salt and freshly ground black pepper
  • 1 teaspoon ground coriander
  • 1/2 teaspoon curry powder
  • Lime wedges, for serving

Instructions

 

  1. For the topping: Preheat the oven to 350 degrees F and line a baking pan with parchment paper.
  2. Toss the cashews and coconut with the oil, curry powder and salt in the baking pan. Bake, stirring once or twice, until the coconut is golden brown, about 5 minutes (be careful, it can burn quickly towards the end). Stir in the lime zest and cool completely. Transfer to a bowl and stir in the cilantro.
  3. For the fish: Increase the oven temperature to 425 degrees F and line a baking pan with parchment paper.
  4. Drizzle the parchment with olive oil and place the fish on top. Sprinkle all over with salt and pepper, turning the fillets to coat them with the oil. Sprinkle the top of the fish with the coriander and curry powder, then roast until the cod is just cooked through and flakes apart easily, 12 to 15 minutes.
  5. Serve the fish with the cashew coconut topping and lime wedges on the side.
