A few years back when we debuted Knit Stars Masterclass Season 3, Arne + Carlos showed us how they make the Norwegian purl.

And all around the world, knitters who had always been stumped by the continental purl said a collective “OOOOH AAAAHHHHHH…”

After all, lots of us love the continental knit stitch because it’s lightning fast, especially in the round…

But our friends in Peru who create our bespoke yarns are very, very picky. And when the first batch of Smoothie 80% wool / 20% silk rolled out, the silk fiber just wasn’t quite up to their standards. So they went back to the drawing board.

Whip up this easy yet filling salad in under 30 minutes. You’ll be so happy you did! The Vietnamese Noodle Salad from PlatesandPairings-dot-com is a perfect dinner or on-the-go lunch on a hot summer day. It’s made with chilled rice noodles, tons of veggies, and a tangy yet sweet dressing to top it off!

Ingredients:

• 8 ounces rice noodles

Dressing:

• 3 Tablespoons fish sauce
• 3 Tablespoons fresh squeezed lime juice
• 2 Tablespoons brown sugar
• 1 Tablespoon rice wine vinegar
• 1 Tablespoon water
• 1 clove garlic (grated or minced)
• 1 jalapeno (minced)

Salad:

• 2 carrots (julienned)
• 1 red pepper (thinly sliced)
• 1 cup sliced cucumber
• 1 cup cilantro (minced)
• 1 cup Thai basil leaves
• 1 cup mint leaves
• 1 cup chopped peanuts
• Lime wedges for serving (optional)

Instructions:

• Cook the noodles according to package directions; rinse with cold water, and set aside.
• Meanwhile, whisk together the dressing ingredients.
• Toss the noodles with the dressing and vegetables. Top with fresh herbs and chopped peanuts. Serve with lime wedges. Enjoy!
