Scoop: The shape-shifter 💡

For her Everyway Shawl, Loops Trooper Karen chose four colors in Chasing Rabbits Fiber Co. Merinolux Aran- a plush, oh-so-soft 100% Superwash Merino.

Karen used 1 skein of Bougainvillea, 1 Spanish Moss, 1 Honey, and 3 skeins of Ivory. To get the most out of the yarn and use only 3 ivory, she shortened the middle ivory section and worked on Size 9 and 10 needles.

Here’s what Karen had to say about her Everyway:

“The yarn is super soft and squishy. I loved knitting it because it worked up really fast on the big needles! There was enough variety to keep it interesting, but it was simple enough for car knitting without the pattern. It’s like a super-cute blanket to snuggle up in when the AC gets too intense.”

“I like how it can be worn so many different ways. It has buttons along one end, and also on the side, so it can be adjusted however you want it.”

This recipe is the one-skein wonder of cooking: Veggies and protein, all in one pan! It’s quick to prepare, quick to clean up, and best of all…delish!

One Pan Salmon with Carrots and Tomatoes

Ingredients:
2 salmon fillets (skin on, 4 ounces each)
Salt
Pepper
1 1/2 tablespoons olive oil
1 pint cherry tomatoes, halved
4 medium carrots, peeled and cut into 1/4-inch thick coins

Directions:
1. Heat oven to 400°.
2. Season salmon on all sides with salt and pepper. Pat dry with paper towels.
3. In a large skillet over medium heat, heat oil. Add salmon, skin side down, and sear until edges of skin start to brown, 3 minutes.
4. Remove salmon from skillet, add tomatoes and carrots and season with more salt and pepper, then place salmon on top of vegetables, skin side up.
5. Transfer to oven and roast 6 to 8 minutes, flipping salmon halfway through, until salmon is cooked through, tomatoes are slightly soft, and carrots are al dente.
